Spring is when Happy Dirt kicks off our North Carolina season, as the fields slowly wake up from winter. In March, early-spring vegetables like Broccoli Raab and Red Radishes begin to emerge, signaling the start of a new growing season. Our North Carolina season always begins in the east, where the warmer climate allows for an early harvest. Many of the crops available in spring—like leafy greens and cabbages—will briefly gap during the summer months but will pick back up in the fall as we move with the seasons across the state.
